I make this recipe but skip cooking the tomatillo. I like the freshness of using raw tomatillo and add a small ripe avocado for smoothness. It’s great both ways!

Your Salsa Verde was absolutely the best, nice & spicy, the flavor was so yummy. This was the real deal & tasted even better roasting the tomatillos, garlic, onion ( used Spanish yellow onions, it’s what I had).
I did add a sprinkle of roasted Cumin seeds. Everyone said “M-M-M-M, oh so so good & delicious. Boiled or roasted, the Salsa Verde was a hit. Thanks so much for sharing, keeper recipe.

Hi Mari,
Gooseberries are not sweet at all, quite tangy, slightly herbal flavour. Nothing like the flavour of Tomatillos but the tanginess of the Gooseberry works in the same way.
I just replaced the Tomatillos in your recipe with Gooseberries. I didn’t cook my salsa to retain freshness but I really should try a cooked version before the Gooseberry season ends.

It was only when I tasted an experimental salsa that I made using Gooseberries (Ribes uva-crispa) that I realised that it was your Salsa Verde recipe but made with Gooseberries not Tomatillos. In fact, I have no Tomatillos so it was a good choice for a sub.
It’s a short season for fresh Gooseberries here in the U.K. so I’m glad that I discovered another use for them.
