Izzy, you can maybe use powdered spices to your liking. Or you can boil them in little water to get some sort of concentrated and add it to the dough mixture.

As for cooking them in a pressure cooker, I have made tamales in an Instant Pot (you can search the recipe here on my blog) but not pumpkin tamales, so not really sure the time the dough will take to cook.

Yes, because those two ingredients add a particular taste and flavor to the recipe.
Foil can work to use at place of tamales, however I prefer parchment paper, or both even. Add the dough to parchment paper squares, then wrap them with foil.
For brown sugar substitutes you can use regular sugar, however, brown sugar has a deeper flavor, so is up to you.

Heavenly recipe! I’ve used parchment paper, there was no way I could find corn husks now – and honestly had no idea they could work like this – and everyone loved it, so fall-like and sweet. It was just as good the next day!
