Hi Mari,

I have cooked the pork ribs and made the adobo sauce, but I had no Chile Pasilla so substituted with the same number of Chile mulato. It is divine with the stock from cooking the ribs!
Anyhow, the ribs are cooling in the cooking stock so that I can remove the fat tomorrow and use to fry them.
I did however have some pork shoulder steaks which I fried and then smeared liberally with adobo on both sides, fried again on both sides then added a ladleful of stock. Simmered for 20 minutes, removed pork and reduced the sauce for another 5 minutes on high.
Beautiful!
Looking forward to the ribs tomorrow.

That juicy sauce was everything! Amazing how the pork ribs absorb all that spicy essence, but not really something so spicy that you can’t eat, it’s great! Great recipe and well explained, your cooking skills are awesome!
