You can mince the pork belly with a knife. If you don’t have pork belly you can substitute with another fat cut, like pork shoulder.

Hi Mari,
I used some of this today to make your Sope de Lentejas which was greedily wolfed down, definitely a crowd pleaser!
I have received quite a large order from my uk Mexican food suppliers today, including a Tortilla press, corn husks and masa Harina for Tamales, 1kg Guajillo chillis, 500g each of dried Epazote and Mexican Oregano plus some dried Hoja Santa and some Pasilla and Mulato chillis. I’m really looking forward to some new cooking adventures although I must confess that I’d love to try both Hoja Santa and Epazote as fresh herbs. Alas here in Britain I have to be (which I am) happy with the dried versions.
