This was SO GOOD! The ground turkey mixture was flavorful and the quesadillas were to delicious! Do you think I can make this recipe with leftover Thanksgiving turkey too?

I was looking for a gluten-free quesadilla options and stumbled upon this recipe, I substituted it with corn tostillas and they tasted so good! Will try adding chipotle peppers in adobo sauce with it next time.
