El helado de elote es con lo que sorprendo a mis invitados en verano porque en esta parte del mundo se les hace rar\u00edsimo que hagamos helado casero usando ma\u00edz fresco, pero cuando lo prueban indudablemente terminan enamor\u00e1ndose de este rico postre mexicano.<\/p>\n\n\n\n<p>Ten\u00eda muchas ganas de proponerles esta receta porque es una de mis favoritas y por tiempo busqu\u00e9 en la red y anduve probando diferentes m\u00e9todos e ingredientes para prepararla. <\/p>\n\n\n\n<p>La nieve de elote en M\u00e9xico es muy com\u00fan y casi en todas las paleter\u00edas y never\u00edas la pueden encontrar. Su sabor es delicioso y particular, si alguna vez han comido pan de elote el sabor es igualito pero en versi\u00f3n congelada y cremosa, lo que es una delicia en esta temporada de calor.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Y si no encuentran leche condensada en lata pueden preparar nuestra <a href=\"http:\/\/www.maricruzavalos.com\/es\/como-hacer-leche-condensada\/\">receta de leche condensada<\/a> casera.<\/p><\/blockquote>\n\n\n\n<h2 class=\"wp-block-heading\">Como se hace esta nieve de elote?<\/h2>\n\n\n\n<p>Normalmente la nieve\/helado de elote se prepara usando <a href=\"https:\/\/es.wikipedia.org\/wiki\/Elote\" target=\"_blank\" rel=\"noopener\">ma\u00edz tierno y fresco<\/a>; en M\u00e9xico es muy f\u00e1cil encontrar las mazorcas en los mercados y supermercados pero aqu\u00ed donde vivo no es tan f\u00e1cil y solo se encuentran frescas ya muy entrado el verano. <\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"1200\" height=\"800\" data-pin-url=\"https:\/\/www.maricruzavalos.com\/es\/nieve-de-elote\/?tp_image_id=56289\" data-pin-nopin=\"1\" src=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2021\/11\/corn_elote.jpg\" alt=\"Dos mazorcas de elote fresco sobre una superficie negra.\" class=\"wp-image-56289\" srcset=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2021\/11\/corn_elote.jpg 1200w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2021\/11\/corn_elote-300x200.jpg 300w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2021\/11\/corn_elote-1024x683.jpg 1024w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2021\/11\/corn_elote-768x512.jpg 768w, https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2021\/11\/corn_elote-150x100.jpg 150w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<p>As\u00ed que no queda de otra que usar el famoso elote de lata que si tienen poco tiempo a disposici\u00f3n para la cocina, este resulta un poco m\u00e1s conveniente.<\/p>\n\n\n\n<p>Como no logro decidirme cual de los dos m\u00e9todos que he usado para este helado de elote es el mejor (lo \u00fanico que cambia es un poco la consistencia y ligeramente el sabor), yo les propongo los dos y ustedes ya deciden cual es el m\u00e1s conveniente para ustedes.<\/p>\n\n\n\n<p>Si usan elote fresco es importante que primero lo cuezan y desgranen para enseguida usarlo como indicado en esta receta de helado de elote. Para cocerlo bastar\u00e1 poner las mazorcas enteras a hervir en abundante agua; no desgranen el elote primero ya que pierde mucho jugo que es donde est\u00e1 el sabor.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Receta helado de elote (dos m\u00e9todos)<\/h3>\n\n\n\n<h3 class=\"wp-block-heading\">M\u00e9todo 1<\/h3>\n\n\n\n<p>En una licuadora poner:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>400 gr de elote cocido (o de lata)<\/li><li>1 lata de leche condensada (397 gr\/ 305 ml)<\/li><li>120 gr de az\u00facar blanca<\/li><li>250 ml de leche entera<\/li><li>200 gr de crema de leche<\/li><li>1 cdita. de canela en polvo<\/li><li>2 cditas. de extracto de vainilla<\/li><\/ul>\n\n\n\n<p>Dependiendo de la potencia de la licuadora licuar hasta que no haya grumos (unos 4-5 minutos constantes). Poner el preparado en un contenedor de pl\u00e1stico. Poner en el congelador y dejar reposar por 1-2 horas m\u00e1s o menos.<\/p>\n\n\n\n<p>Sacar el preparado y licuar nuevamente, pueden usar un minipimer para licuarlo dentro del contenedor, o simplemente poner el preparado en la licuadora y\u00a0licuar nuevamente. <\/p>\n\n\n\n<p>Esta operaci\u00f3n ayuda a romper los cristales de hielo y a que la nieve de elote adquiera una consistencia cremosa pero es necesario <strong>repetirla al menos otras dos o tres veces<\/strong>. Yo la he dejado incluso en el vaso de la licuadora para poder licuarla directamente, al final de la \u00faltima licuada la paso a un contenedor de pl\u00e1stico para guardarla en el congelador.<\/p>\n\n\n\n<p>El reposo entre licuadas depender\u00e1 de la temperatura de su congelador y tambi\u00e9n del contenedor donde han puesto el preparado. En un contenedor de aluminio el preparado se congelar\u00e1 m\u00e1s r\u00e1pidamente, mientras que en un contenedor de vidrio o pl\u00e1stico tender\u00e1 a tardarse un poco m\u00e1s. <\/p>\n\n\n\n<p>Pueden controlar la consistencia de la nieve de elote con un tenedor, lo importante es que no est\u00e9 completamente congelada pues se corre el riesgo de romper el aparato con el que licuar\u00e1n, en la foto de abajo les muestro m\u00e1s o menos la consistencia que debe tener entre entre una licuada y otra.<\/p>\n\n\n\n<p>En el caso que el helado de elote se congele demasiado bastar\u00e1 dejarlo fuera del congelador un par de minutos para que se ablande.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" data-pin-nopin=\"1\" src=\"https:\/\/www.maricruzavalos.com\/wp-content\/uploads\/2019\/08\/4I2B0073.jpg\" alt=\"La nieve de elote dentro una licuadora.\"\/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">M\u00e9todo 2<\/h3>\n\n\n\n<p><em>Ingredientes:<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>400 gr de elote cocido (o de lata)<\/li><li>250 gr de leche condensada<\/li><li>1 cdita. de canela en polvo<\/li><li>2 cditas. de extracto de vainilla<\/li><li>250 ml de crema para batir<\/li><\/ul>\n\n\n\n<p>En una licuadora poner todos los ingredientes <strong>menos la crema para batir<\/strong>. Licuar muy bien todo hasta obtener una crema espesa y tersa. Poner en un cuenco grande y dejar reposando en el refrigerador por 1hr. Batir la crema hasta que est\u00e9 bien montada a punto de nieve.<\/p>\n\n\n\n<p>Delicadamente y usando una esp\u00e1tula, incorporarla en el cuenco con la crema de elote. Usar movimientos envolventes de abajo hacia arriba y delicados para evitar que la crema se desinfle. <\/p>\n\n\n\n<p>Poner el helado de elote en un contenedor \u00a0(de aluminio o pl\u00e1stico), cubrirlo bien y meterlo al congelador aproximadamente por 6-8 horas.
