Really fresh and a nice change to the usual Pico de Gallo salsa. I didn’t peel the cucumber.
I thought there may be leftovers but my partner’s 89 year old mother saw to it that there wasn’t!

Had this tonight along with homemade Guacamole and a stew of Shin Beef (on the bone, sliced about 1inch thick) cooked in a sauce of Ancho and Guajillo peppers with a deseeded Chipotle and a medium onion, quartered and blackened and lots of garlic blitzed in a blender.
Cucumber Pico de Gallo was particularly well liked with the carne con Chile by my partner’s Mother, who has the beginnings of Dementia, as was the Guacamole that I made.

Loved this pico recipe so much! I never thought of adding cucumber, really gives a nice crunch and refreshing flavor to the traditional pico. I served it with crispy tacos and my family loved it!
