Hi Mari,

I’ve literally just finished a bowl of this, so has my partner. Blue Tortillas for dipping and a Pineapple and Aji Limon Drop salsa. Mindblowingly good!

I subbed 2 Chile Serrano for the Jalapeño as that was all I had.
Due to “him next to me”, I used a mix of ribs and diced shoulder as he doesn’t like bones! After the initial cooking I reduced the cooking water by boiling to just under a pint (U.K. 20floz) rather than reserving some of it.
I proceeded with the recipe in the cleaned pan.
