In reply to Mimi. Hi Mimi, that’s a great question. Personally, I’ve always blended the corn completely because I love flan to be silky and smooth, so I’ve never made it with whole kernels mixed in. That said, cooking is personal, and if you enjoy a bit of texture, you can absolutely experiment and make it your own. If you try it, I’d love to hear how it turns out!

Would it be okay to leave actual bits of whole corn in the picture just for some added texture? I'm trying this tomorrow so I thought I'd ask if it's been done that way

This might be the best dessert I’ve ever made. Creamy, silky, thick, perfect sweetness. And the corn flavor! I wasn’t expecting that much of the corn flavor to come through but wow, there is no mistaking it!
I will be making this again and again, thank you!
