Also I have all three chilies on hand, would you recommend doing 2 guajillo and 2 pasilla or just one of them? Thank you!

Hi Mari,

I used some lovely locally produced beef chuck for this tonight. I made the sauce last night, albeit with different chillis as I don’t have any Guajillo at the moment. I used 5 Chili Cascabel, 3 Chili Ancho a Chili Pasilla (my last) and a dried chili Chipotle.
Absolutely beautiful.
Served with Guacamole, Frijoles de la olla and blue tortillas.

Hi Dorothy, sorry! I totally forgot to write where it goes. I edited the recipe card now, onion should be blended with the rest of the ingredients for the sauce. Thank you for noticing :)
