Hello. The recipe looks quite good and much more authentic than most I’ve seen. But, your description misses some key information. You need to indicate that the tomatoes are in boiling water. You only said to put them in a medium pot. Also, sear the meatballs? How can you sear them when you’re putting them directly in the sauce?

Hi Mari, I’ve used this recipe twice, in a way.
Firstly, your recipe as it is, with meatballs (I subbed Mozzarella cubes for the hard boiled egg) and plain white rice and again tonight…except the meatballs never happened. I fried the minced beef, then some chopped onions and a red (bell) pepper sliced, then finally the sauce, all separately.Added everything back with the sauce and simmered till reduced. Served with Black Beans.
Both were divine!

I recently made Albondigas en Chipotle, and it’s now a favorite in my recipe collection! I paired it with rice, and the combination was heavenly. Definitely a must-try, versatile dish!
